Coffee cherry tea
The directly traded cascara from Colombia has a refreshing, tangy and sweet taste, reminiscent of iced tea, lime and honey.
The coffee cherries are carefully sorted after harvest, ensuring a fine selection. They are then roasted briefly at a low temperature. The blend consists of washed and honey-processed cascara, as well as naturally preserved cascara.
Finca San Luis has been run by the Arango family for 20 years. Farmer Omar owns 21 microlots and is keen to experiment with a wide variety of processing methods. This has led to particularly impressive results. Furthermore, the cultivation is carried out exclusively according to organic guidelines, without any use of chemical sprays or fertilizers. Initially due to a lack of resources, but later out of complete conviction. The Finca San Luis US vineyards are now certified organic. Through collaboration and cooperatives, they pursue their ideal of developing sensory profiles rather than simply chasing flavors.
"We exported cascara for the first time in 2017. Our goal is excellence, and in our search for more complexity, more sweetness, and less astringency, we experimented extensively and discovered that not only the processing on the finca itself, but also the selection is an extremely important step in the process. The coffee cherries are sorted, and any residual parchment, leaves, and stems are removed. Then there is a short, low-temperature roast, and we create a blend of washed and honey-processed cascara, as well as naturally preserved cascara. The result is a drink that is primarily sweet, yet refreshingly tangy."

Preparation:
Pour 2 tablespoons of dried coffee cherries into 300ml of water (about 85°C).
Let it steep for 5-8 minutes.
The longer the tea brews, the more intense its flavor becomes.
The coffee cherries settle in the glass or pot.
For a cold refreshing drink, let the cascara steep in the refrigerator overnight.
Very tasty with lemon slices and ice cubes!
